Authentic Eggs Benedict is hard to find. Most restaurants can’t be bothered. In San Diego it was scarce even at restaurants advertising “brunch.”
I once spied it on the menu at a Greek coffee shop and they didn’t even know what it was.
When you do find it, it’s usually a mix, unless you’re dining at the Waldorf. A mix?? Instant Eggs Benedict? What a profanation!
